There is nothing like a delicious chocolate and many times the over processed confections that are sold in many stores often don’t hit the spot for real chocolate lovers. How do we resolve that? Well we find this delicious Chocolate Raspberry Bonbons recipe from Elana’s Pantry of course! It’s just an added bonus that these are gluten free and vegan friendly as well so even more of you chocoholics can enjoy them!

Chocolate Raspberry Bonbons
¾ cup dark chocolate chips 73% cacao
¼ cup raspberry jam

  1. Melt chocolate in a small pan over very low heat; you can use a double boiler if you wish and temper the chocolate
  2. Using a small paint brush, coat the bottom and sides of a candy mold
  3. Place mold in freezer for 10 minutes to allow chocolate to harden
  4. Remove mold from freezer
  5. Spoon a scant teaspoon of raspberry jam into each chocolate lined candy mold cup
  6. Paint chocolate over raspberry jam to cover and make final layer
  7. Place in freezer for 10 minutes to harden
  8. Remove from freezer, turn mold upside down and pop candies out of mold
  9. Serve
makes 11 bonbons (depending on your mold)

This week for Follower Friday I am spotlighting @glutenfreelish!

For today’s follower Friday I am picking glutenfreelish from glutenfreelicio.us ! Glutenfreelish runs a blog dedicated to gluten free living whether it’s reviewing existing gluten free products or baking tasty gluten free recipes Glutenfreelish is always on the lookout for tasty gluten free treats. Glutenfreelicio chronicles a journey in a gluten free life by a woman who is not sensitive to gluten who has a family that is! One of my favorite things about Glutenfreelish’s blog is her style of writing, she writes to you and not at you and she details the things that you really want to know ie: gluten free pizza not gluten free cardboard treats.

What else do I love about Glutenfreelish? I love love love her choice of foods, while she includes and recommends healthier snack choices and dinner ideas she also includes the snacks that children will eat and enjoy. Recipes range from Saucy Baked Ziti, to savory sweet potato bread. My favorite post from Glutenfreelish? Enjoy Life’s Soft Baked Snickerdoodles because a) I just discovered Enjoy Life’s Boom Choco Boom chocolate bar which is delicious and b) these cookies sound amazing!
